The Ohsawa diet number 7 consists in eating rice, wheat, buckwheat and millet for 10 days. It is s recommended to use organic products, integral if possible, pure water (spring water) and pure salt (sea salt, or any salt without additives). We should also make sure that we do not over cook the food (over boil, over fry or over bake) as this will destroy the good elements in the ingredients. Oshawa Tips
- Pancakes/chapatti
- Fried wheat (then grinded)
- Oven bread
- Rice soup: Basmati (20ml of rice cooked for half an hour)
- Wheat Soup (cooked for one and half to two hours)
- Buckwheat
Pancakes
Using wheat flour (preferably wheat grains ground into flour), add salt to taste, add warm (not hot) water, mix well and leave to stand for (at least) half an hour. The mixture can be made into a wetter pancake mix or dough – depending on recipe. Mix well again before use. Heat frying pan until hot, pour mixture into pan (a ladle full) and cook on medium heat until sealed on one side. Flip pancake and cook. Press down on pancake using plastic slice.
Fried wheatIn a frying pan, pour a layer of wheat and salt to taste into a small amount of water (just enough to cover the surface of a pan). Cook on medium heat (stirring almost continuously) until water is evaporated and the wheat grains become crisp. These can also be ground to a powder and sprinkled onto rice, rice soup, etc for extra taste.
Another option is to fry the wheat at a high temperature, without adding salt or water. Initially the pan should be very hot and in less than 2 minutes the wheat will start to pop (like popcorn, but without breaking). Continue cooking until the grains have a nice yellow-brown colour. You should stir continuously as the wheat will easily burn.
Oven bread1. Follow the same steps as for pancakes, but make the mixture into a wet dough. A muffin tray should be heated well in the oven at 180/200 degrees before use, and should be lightly floured (to avoid muffins/bread sticking to tray). Leave dough to sit at least half an hour before pouring in to the muffin tray and then cook for 30/40 minutes. Break open one bread to check if cooked inside. It is good to bake until the outside is crispy.
2. Make a normal dough (just flour, salt and water) and make a normal bread. It is recommended to make small breads as they cook better.
Note: All breads can be made with a combination of wheat, rice and buckwheat as preferred.
Rice soup
If it is white rice, cook a handful of rice (less than 1 part rice to 6-7 parts water), adding salt in to a pan of water and boil for at least 20 minutes until the water is starchy. If the rice is brown, boil until it is cooked.
You can also add a handful of buckwheat towards the end of cooking time.
Wheat soupWhen making wheat soup, the wheat should be boiled for at least one and a half /two hours with sufficient water. The wheat spoils quite quickly so it is recommended to eat it that day.
BuckwheatCan be made by simply adding boiling water and salt to the buckwheat in a tupperware container, putting on the lid and covering with cloth. Allow to stand for 15/20 minutes.
